The Saperavi grape, a Georgian marvel, is cultivated with reverence in the Akhoebi micro-zone (PDO), yielding a wine of profound character. Hand-harvested from venerable vines aged 15 to 45 years, each grape is a testament to the land's fertility.
Following pressing, the juice, along with grape skins, stalks, and pips, is entrusted to the Qvevri, an amphora-like sanctuary buried in the earth, where it undergoes a natural fermentation.
After the malolactic fermentation, these ancient vessels are sealed, marking the commencement of an aging process of 6 to 8 months. This maturation bestows upon the wine a dark ruby hue, as intense as its origins. Such is the traditional Georgian method of Qvevri winemaking, a practice enshrined as intangible cultural heritage by UNESCO, resulting in a wine that is not just consumed, but celebrated.
