The Tavkveri grape, affectionately known as the “hammerhead” for its distinctive flat-topped berries, is a native gem from Georgia's Kartli region. Thriving in the region's deep clay and sandy soils, it is a late-ripening varietal that yields floral and exotic red wines of a dark ruby hue. The winemaking process honors the ancestral methods, with grapes being pressed and their essence poured into the Qvevri, an amphora-like vessel, for fermentation beneath the earth.
Following the fermentation, the Qvevri is sealed, and the wine embarks on an aging odyssey for 6 to 8 months, enhancing its complexity and depth. This traditional Georgian technique, safeguarded as a UNESCO-recognized intangible cultural heritage, encapsulates the soul of the region, offering a wine that is as rich in history as it is in taste.
